12 small new red potatoes
2 tablespoons low-fat sour cream
2 teaspoons hing (omit hing on Ekadasi as most hing is cut with whole wheat flour.)
1 teaspoon salt
freshly ground black pepper to taste
1 tablespoon chopped fresh dill or parsley
Scrub the potatoes and place in a saucepan. Cover the potatoes with water and bring to a boil. Reduce the heat to medium and simmer until tender, about 10 to 15 minutes. Drain the potatoes well. Place the potatoes in a bowl and add the sour cream. Stir gently and add the salt and pepper and hing. Serve warm with a sprinkle of chopped dill or parsley or other fresh herb like rosemary, sage or thyme.
